Ísland hefur komið inn á þetta svið af krafti og hefur sýnt óviðjafnanlegan vöxt miðað við önnur heimssvæði á síðasta áratug og náði 50 þúsund tonnum á síðasta ári. En markmiðin ná lengra. Með réttum skrefum gæti framleiðslan farið yfir hundrað þúsund tonn á næsta áratug. Þetta myndi skila meira en hundrað milljarða í útflutningstekjum fyrir Ísland og skapa veruleg verðmæti á landsbyggðinni þar sem bændur starfa.“
